So I may be a bit behind the times with the cauliflower pizza base but I have recently jumped on the low carb band>wagon, and> given them a go! I love pizza but I am trying to focus on lowering my starchy carb intake at the moment as it seems to work best for me.   Whilst I am not an advocate of restrictive diets, who doesn’t enjoy a pizza every once in a while, I do enjoy finding healthier versions of my favourites so I can indulge more often!

So how  do you make these fabulous yummy healthy pizza bases, well actually they are quite simple.  I followed a recipe by the lovely Nic, from Nics Nutrition.  You can find the recipe and> loads more healthy recipes on her website HERE!

The recipe makes 2 pizza bases.   Blitz 1 whole cauliflower into a rice and> then mix it well with 2 eggs &  75g of cheese, I have used Parmesan & Mature Cheddar in my versions and> both work well.  Season the mixture and> add a selection of herbs for more flavour if you would like.  Line a baking tray with greaseproof paper, add the mixture and> pat into 2 round flat pizza bases.  Bake for around 25 minutes at 220 Degrees Celsius.  Once baked & golden, add your tomato sauce – I’ve used passata or tomato puree before, and> mozzarella.  Now the fun bit you get to go wild with any toppings you want!  I’ve done ham & pineapple before, veggie & a slightly more naughty meat feast style one! Bake the pizza for a further 10 minutes or until the cheese has melted, and> serve! Amazing!

Plus cauliflower is a great source of fibre, and> packed full of vitamins so you can actually claim Pizza is good for you! Yes to that!  Let me know if you give these a go, or have tried any other cauliflower pizza recipes!
